The meta rom-com America's Sweethearts tries to convince us that not only is Julia's character Kiki an unextraordinary wallflower, but also that she used to be fat. Hence the extra pounds you see in a flashback scene or two. To be honest, I wouldn't even qualify this as a fat suit; she resemble someone curvy but not someone dangerously overweight. Of course, on her skinny frame it was a shocking addition.
Rumor has it that the producers tested a larger suit, but it didn't go over well. No surprise, seeing as viewers responded negatively to Julia's fat suit and the message that John Cusack warmed up to her only after she'd shed the pounds.

We're really surprised that someone as chic and pulled-together as Gwyneth went for this role, but maybe she thought it would make her seem less uptight. Unfortunately, we don't remember anything about her performance, only that according to this movie a woman's inner beauty is still a size zero with perfect hair.
The Scary Movie of rom-coms tried to emulate Shallow Hal and failed just as badly... maybe even moreso because we expected more from Alyson and the Wayans brothers.
Most of the examples here are famous actresses/personalities who are already known for their good looks before they put on the fat suit. Then you have Amy Adams, who put on the fake pounds in one of her first roles on Smallville: She plays an overweight teen who starts dieting on vegetables grown in kryptonite-rich soil. Once the pounds start sliding off -- this photo shows her about halfway through the process -- she has to suck the fat out of people to keep getting slim.
I actually watched this Lifetime movie when it aired in 2007. The beautiful Big Bang Theory star played a teenager who decides to wear a fat suit and document her experiences for a college scholarship. (Meta!) See, she believes that her overweight family uses their size as an excuse to be lazy, but of course she comes to realize the opposite when she experiences some pretty ugly discrimination and depression.
The Makeup Gallery has a quote from Kaley that's really illuminating in its honesty:
"The first night I put [the fat suit] on, I called my mom from my hotel room sobbing and crying. Initially, it was difficult to see myself like that. It was emotional, it was hard and it was draining."
You have to wonder if ET got Melissa to pack on the fake pounds as a way to teach her lessons about inner beauty, or if (God help us) she's out to criticize other people's prejudices.
